One Prawn & Co by Hui Designs

Charred surfaces and violet accents define One Prawn & Co restaurant in Singapore.

Hui Designs has transformed a 2000-square-foot space in Singapore's River Valley district into a modern Asian seafood restaurant, where an open kitchen and raw materials create a contemporary dining experience.

Located in New Bahru, a burgeoning lifestyle destination, One Prawn & Co represents a significant evolution from its humble beginnings as a hawker stall. The restaurant's co-founder Ang, a Culinary Institute of America graduate, earned a Michelin Bib Gourmand recognition in 2022, specializing in elevated prawn noodles and aged seafood specialties.

The interior design concept responds directly to the restaurant's "Fire and aged fish" culinary approach, with the focal point being a theatrical open kitchen that showcases the wood fire oven and grilling stations. A long dining counter runs parallel to the kitchen, illuminated by linear LED pipe lighting that culminates in a striking globular pendant feature.

At the entrance, dry-aging refrigerators and wine chillers create a dramatic display, showcasing the restaurant's aged seafood selections and wine collection. The spatial layout extends to include a Chef's Table at the rear, offering a more intimate dining experience for larger groups.

The material palette draws heavily on industrial and fire-inspired elements. Metallic charcoal grey mosaic tiles combine with burnt wood finishes and rusticated galvanized metal sheets, while non-directional stainless steel provides contrast. ALPI's Sottsass grey veneer, featuring dramatic flame-like grain patterns, provides an organic counterpoint to the metallic surfaces.

To soften the predominantly dark scheme, Hui Designs introduced violet accents through upholstery and metal door frames, bringing unexpected vibrancy to the space. Walls feature a refined cementitious coating, while the flooring comprises concrete-look cork tiles from Granorte, supplied by Rubik material lab.

Custom furniture pieces throughout the restaurant reinforce the contemporary aesthetic. The main dining area features bespoke raw steel chairs and bar stools with carefully selected textile upholstery. The Chef's Table area showcases custom wooden frame chairs that reference Tobia Scarpa's iconic designs, while the outdoor seating area is furnished with pieces from Kave.
